If you ever feel like some good, old-fashioned comfort food on a snowy, wintery day, then I highly recommend you give this soup a try. It’s super easy to whip up and it tastes SO yummy!
- 1 Onion, sliced
- 10-12 Roma Tomatoes, sliced down the centre vertically
- 1-3 cloves of Garlic, peeled
- Extra Virgin Olive Oil
- Salt & Pepper
- Fresh Basil Leaves
- 1-1 1/2 C Chicken or Vegetable Broth
Prep the onions, tomatoes and garlic, then lay them on a baking tray. Drizzle with some EVOO, salt and pepper. Roast at 400 for 15-20 mins (make sure the garlic doesn’t burn).
Remove from onion and add to a blender along with basil, broth and a dash of salt. Blend until incorporated.
Voila! That’s it. Roasting the veggies in advance brings such a rich flavour to the soup. Of course, for a taste of your childhood, pair it with a grilled cheese sandwich!
